Salmon and veggies graced our grill which resulted in a healthy and colorful meal. I love summer for the abundance of local produce as well as long sunlit days. Thankfully, I live in the “Garden State” where I can drive a mere 5 miles and encounter a roadside fruit and vegetable stand. Keep healthy and fit by supporting your local farmers!
P.S. the vegetables are asparagus, red peppers and brussel sprouts, tossed in canola oil with salt and peppper and grilled in a basket. The salmon is brushed with olive oil, salt and peppered to taste and grilled for 5 minutes on each side.
