Eggs – The Other Protein

Since I’ve started the Dukan Diet last week, one of the items I don’t have to scrimp on is eggs. Right now I’m in the Cruise phase which allows me to eat veggies every other day along with my protein. I call this a Greek omelet (it’s just missing the olives). Keep healthy and fit by utilizing eggs as your main protein (instead of meat, poultry or fish) at your next meal.

P.S. I’ve lost 6 pounds on the Dukan Diet which I began on 9/10/12

Greek Omelet

2 Large eggs

2 Tablespoons of diced tomato

2 Tablespoons of chopped fresh spinach

3 Tablespoons of crumbled feta cheese

Salt and fresh ground pepper to taste

Spray pan with cooking spray (I used olive oil spray) and set to medium high heat. Whisk all ingredients in medium bowl and pour in hot pan. Cook for approximately 4 minutes and turn half of the omelette until you have a half moon, flip over and cook for another 4 minutes. I like mine a little well-done, cook for a shorter period of time if you like it a little softer.
