Fresh Caprese Salad

June 19th, 2012 | Recipes

This is one of my favorite side dishes that I always seem to make when I have three simple fresh ingredients on hand (tomatoes, fresh mozarella and basil). I just called it tomato with mozzarella, and I recently learned that there is an actual name for it called Caprese Salad (who knew). So whether you are just drizzling extra-virgin olive oil and grinding fresh pepper and salt, or enjoying it on a sandwich or pizza, know that it has low calorie and low fat ingredients, and is beneficial to your health. Keep healthy and fit by eating some Caprese Salad at your next meal!

Ingredients:

1 Large garden tomato

1 Bunch fresh basil

Fresh mozzarella

Extra virgin olive oil (drizzled)

Salt and pepper to taste

The entire plate would approximately total 247 calories and 174 from fat. I usually can cut 6 slices from a large tomato which would calculate for each tomato 42 calories and 29 from fat.
