Fresh Tomato, Basil And Mozzarella Sandwich

I rushed home from the market yesterday because I was experiencing a vision. No, it was not anything life-threatening just an image of the delectable sandwich I was going to create; and the whiffs of the sweet basil that was sitting next to me in my car was making it more enticing (I was salivating from the aroma). Boy they sure had me pegged when I walked in to purchase a non-food product and there it was, that big sign FRESH SWEET BASIL. Of course right next to the basil was another sign that read FRESH JERSEY TOMATOES. My mind, thinking only of food, immediately went into hunger mode (after all it was lunch time). I grabbed some fresh mozzarella and quickly made a mad dash for the exit. I used the leftover rosemary focaccia bread (from the tuna melt) sliced it very thin, as well as the tomatoes and cheese, drizzled a little extra virgin olive oil, and fresh ground pepper, the result was a masterpiece (in my eyes and mouth at least). Here is the nutritional breakdown of this culinary achievement – fresh mozzarella cheese 1 1/2 oz = 90 calories 60 from fat – 2 large slices of tomatoes 5 oz. = 27 calories 2 from fat – fresh basil about 10 leaves 0 calories and fat – extra virgin olive oil drizzled about 1 tsp 40 calories and 4.5 grams of fat – rosemary focaccia bread 1 oz. 70 calories 7 from fat. That is a total of 227 calories and approximately 100 fat calories (of course you can serve it without the bread also). That’s not too shabby I would say, but I would also have to say “delizioso”!     Yum! I’ve been ODing on just the tomatoes, mozzarella, and basil every since having it at Mary’s house when I was in NYC! Now I can’t wait to try it as a sandwich! Thanks! Jane
