Healthy Chicken Summer Salad

I grilled up chicken breasts yesterday for lunch and wound up with left-overs. Today I concocted a summer chicken salad with grapes, celery and rosemary. When we bake a whole chicken we always add rosemary to the cavity along with a halved lemon. As always I enjoy making up my own recipes, unfortunately they don’t always end up how I would like, but this one is different in that it adds variety to an otherwise bland chicken salad. Keep healthy and fit by allowing your taste buds to grow up!

Ingredients

1 1/4 cups of diced grilled chicken

1/2 cup of sliced grapes (green or red will work)

1/4 cup of finely chopped celery

1/3 cup of fat free Greek yogurt (you can also use lite mayo)

3 teaspoons of finely chopped rosemary

Fresh ground pepper to taste

1/2 squeezed lemon

Mix all ingredients in bowl and enjoy over mixed greens, on pita or a Foldit, on crackers or corn bread as a dip.
